Yes, March 14th is “Pi Day” which is close enough to “Pie Day” for those of us here at the Pie Lovers Society. We’ll use any excuse to enjoy pie!

Since “pi” isn’t quite “pie” I thought I’d post a recipe that isn’t quite pie either, but it sure tastes like it. It’s just the kind of thing that any pie lover can enjoy while running away from mean goblins, orcs, and coneys. I hope you enjoy it! (and I hope I copied it correctly)

Pecan PIE Cookies

Cookie

1 C firmly packed brown sugar

3/4 C butter, softened

1 egg

1 tsp vanilla

2 C all-purpose flour

1 tsp baking powder

Filling

1 C chopped pecans

1/2 C firmly packed brown sugar

1/4 C heavy whipping cream

1 tsp vanilla

Heat oven to 350 degF.

Combine all cookie ingredients except flour and baking powder in large mixing bowl. Beat at medium speed until creamy. Reduce speed to low. Add flour and baking powder and beat until mixed well.

Shape dough into 1 1/4 inch balls . (Dough is sticky so use a spoon if necessary.) Place 2 inches apart on ungreased cookie sheets. Make indentation in each cookie with thumb (or spoon) rotating to hollow out slightly (don’t indent too far).

Combine all filling ingredients in small bowl. Fill each cookie with 1 rounded teaspoon filling. Bake for 8 to 12 minutes or until slightly browned. Cool 1 minute and remove from cookie sheets.

Makes 3 dozen pie cookies!
